Ancelmo Vera Guevera's small, 1.5 hectare coffee farm is located in El Paraiso village, within the district of Huabal. At 2000 meters above sea level, Ancelmo's farm is at a very high altitude, even by Peru standards. He grows a mix of varieties on his farm, including Caturra, Bourbon and some Catimor types (a disease resistant hybrid of Timor and Caturra). His farm is small enough that it can be managed during the harvest by he and his extended family, who pick all the ripe cherries and process at the farm. The coffee is fermented for a full two days before being placed on a lined patio where it will dry over the course of two weeks.
