The cherries are harvested in perfect ripe state, floated in water tanks to take out impurities like sticks, leaves, bitten & unripe cherries. Afterwards, they are taken out of the water and put into plastic bags, closed with leashes and fermented for 36 hours. After that the coffee is pulped, and the fermentation goes on, open in fermentation tanks for five hours. Then without washing the beans they are taken for five days to raised African beds, and the drying finishes in silo due to high humidity levels.
Typica FSL is a natural hybrid of Typica and Bourbon trees that were planted over 50 years ago on the farm and crossed through natural cross-pollination of wind and bees. For 15 years the farm is processing the coffee with organic agriculture. Unfortunately, due to the economic crisis in 2020 they could not renew their license, but go on with the clean philosophy of not applying any chemicals on their farm.
With the red honey process, the focus is on its floral flavors; highlight more of the sweetness, and due to the anaerobic fermentation in the coffee cherries, the body is also highlighted without creating alcoholic notes. We love the clean peach like fruitiness and floral honey like sweetness.
