Huadquiña, based in Santa Teresa on the back side of Machu Picchu, is among the oldest cooperatives in Peru. It was founded in 1964 in the lead-up to the agrarian reform, during which landowners were required to relinquish their land to workers. Huadquiña’s membership remains comprised of indigenous smallholder producers to this day, some of whom are the children of the founding members.
This special lot gets its name from the highest peak in Cusco, Salkantay—6,271 meters above sea level. It is from the waters of this mountain, probably one of the purest bodies of water in the world, that the people of the town of Salkantay survive. This same water runs throughout all the farms, enriching and nourishing crops and producing superb quality.
Although we use it as our current cold brew it's also fantastic as espresso, drip coffee, and pourover.
